Say you only have vegetables and you don't know what to prepare for your family. The fridge does not have all the ingredients you need to prep something for dinner and it's a little too late to do grocery shopping at the time.
1. Stir-Fried Vegetables
Ingredients: Any combination of vegetables you have (like bell peppers, carrots, broccoli, onions, zucchini, etc.), oil, garlic, soy sauce or any preferred sauce.
Instructions:
1. Heat some oil in a pan.
2. Add minced garlic and sauté until fragrant.
3. Add the vegetables, starting with the ones that take longer to cook (like carrots and broccoli).
4. Stir-fry until the vegetables are tender but still crisp.
5. Add soy sauce or any sauce you have and stir well.
6. Serve over rice, noodles, or on its own.
2. Vegetable Soup
Ingredients: Mixed vegetables, vegetable broth or water, salt, pepper, any herbs/spices you have (like thyme, basil, or oregano).
Instructions:
1. Chop all the vegetables into bite-sized pieces.
2. In a pot, add a little oil and sauté some onions and garlic if you have them.
3. Add the rest of the vegetables and stir.
4. Pour in the vegetable broth or water to cover the vegetables.
5. Bring to a boil, then simmer until all the vegetables are tender.
6. Season with salt, pepper, and herbs to taste.
7. You can blend it for a creamy soup or keep it chunky.
3. Roasted Vegetables
Ingredients: Any vegetables you have (like potatoes, carrots, cauliflower, sweet potatoes, etc.), olive oil, salt, pepper, herbs (like rosemary or thyme).
Instructions:
1. Preheat your oven to 200°C (400°F).
2. Cut the vegetables into similar-sized pieces.
3. Toss them in olive oil, salt, pepper, and any herbs you like.
4. Spread them out on a baking sheet in a single layer.
5. Roast for about 20-30 minutes, turning halfway through, until they are golden and crispy.
4. Vegetable Frittata or Omelette
Ingredients:** Mixed vegetables, eggs, cheese (if available), salt, pepper, oil or butter.
Instructions:
1. Chop the vegetables and sauté them in a pan with some oil until soft.
2. In a bowl, whisk the eggs with salt and pepper.
3. Pour the eggs over the cooked vegetables in the pan.
4. Cook on medium-low heat until the eggs are set.
5. If you have cheese, sprinkle it on top before the eggs are fully set and cover with a lid until melted.
6. Serve warm.
5. Vegetable Salad
Ingredients: Any fresh vegetables (like lettuce, tomatoes, cucumbers, bell peppers, etc.), olive oil, vinegar or lemon juice, salt, pepper.
Instructions:
1. Chop the vegetables into bite-sized pieces.
2. In a bowl, mix them together.
3. Drizzle with olive oil and vinegar or lemon juice.
4. Season with salt and pepper.
5. Toss well and serve.
